This is SUPER Delicious :)

We all know that Audrey loves food. Good food. And she probably loves it a little too much. But....what can she say?

Well this weekend Audrey and Kenzi made the most delicious meal they have ever made. That's not a joke. Ever. Made. You will never understand until you make it. 

In order to do that, you'll probably want a recipe huh? Keep your shirt on.....I've got one right here for you. :) 

Dinner=BBQ Chicken Salad

What you NEED:

For the Blue Cheese Vinaigrette:
2/3 cup olive oil
1/3 cup rice vinegar
1 medium shallot, chopped (we just used a green onion, it's basically the same thing)
1-2 garlic cloves, dry pan roasted and chopped
2 tablespoons peach jam (we used apricot jam...because it's what I had in the fridge)
1 cup sour cream
1 cup blue cheese or Gorgonzola
Salt and pepper to taste

For the Potatoes:
2-3 pounds red potatoes, washed
1 stick butter
1 medium shallot, minced (green onion)
1 small bunch parsley, finely chopped
*I put in a little bit of garlic powder...because well......we both love garlic...and, since when did garlic hurt anything?

For the Chicken:
Chicken breasts
BBQ sauce-use your favorite brand

For the Salad:
Mixed greens
Tomatoes, chopped
Black beans, rinsed and drained
Corn
French fried onions (YUMMY)

Directions:
1. To make the blue cheese vinaigrette-put all of the ingredients into a food processor or blender. Mix until smooth. If the dressing is too thick, add a drizzle of extra olive oil and mix again.

2. To make the potatoes-boil a large pot of water and salt well. Boil potatoes until they are fork tender. Drain the water and return potatoes to the pot. Stir in butter, shallot, and parsley. Stir well. Set aside and keep warm until serving.

3. Grill the chicken and brush each piece liberally with BBQ sauce. Cut into strips and set aside.

4. To plate the salads-place mixed greens on a plate. Lay the sliced chicken on top of the greens. Top with tomatoes, black beans, corn, and fried onions. Place a few warm potatoes on the side. Drizzle entire salad with avocado vinaigrette and blue cheese vinaigrette.

This really was the most delicious thing we have ever had. Here...look at some low quality pictures.

 Now, I would like you to know I hadn't eaten since 12 that day. and it was 8 by the time we had this all finished. So I was starving. It did the job. :)


Our next venture was homemade donuts. :) Yes. Yes donuts. 

Recipe: 

Ingredients

  • Nonstick cooking spray
  • 1 cup whole-wheat flour
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup low-fat buttermilk (1%)
  • 2 large eggs
  • 1/4 cup honey
  • 2 tablespoons melted butter
  • 1 tablespoon vanilla extract

Preparation

1. Preheat oven to 425°. Lightly coat a doughnut pan with cooking spray.
2. Combine flours and next 4 ingredients (through salt) in a large bowl, stirring well with a whisk.
3. Combine buttermilk, eggs, honey, butter, and vanilla, stirring well with a whisk. Add buttermilk mixture to flour mixture; whisk just until combined.
4. Spoon batter into doughnut pans, filling two thirds full. Bake in middle of oven until doughnuts spring back when touched and are golden on bottom (about 8 minutes). Let cool in pan slightly (about 4 minutes); turn out. Coat with toppings (see ideas, below), if desired.

Now....disclaimer....we don't own a donut pan. Haha....who honestly owns a donut pan? So we decided to just use a muffin tin. And believe it or not, it worked. Crazy right? Donuts...that aren't shaped like donuts....a little strange...i know. To top them off, we had some hazelnut nutella :) and we made a raspberry cream topping. Recipe is also included below . Your welcome.

1 1/2 cups frozen raspberries
6 Tbsp granulated sugar
1/4 cup water
Some lemon juice (probably used 1/2 a Tablespoon or so)
3 oz white chocolate, finely chopped
1 cup whipping cream
In a small saucepan, combine the raspberries, sugar and water. Bring to a boil over medium-high heat. Reduce the heat to medium and continue to cook, stirring often, until the mixture thickens and becomes a jam-like, about 8-10 minutes total. Strain the mixture through a fine strainer into a medium bowl, pressing hard onto the solids. lemon juice. Cool to room temperature.

In a small, microwave-safe bowl, melt the chopped white chocolate by heating it in 30 second intervals in the microwave. Stir well with a fork between each interval and cook only until the chocolate is smooth when stirred.


Whip the cream in a medium bowl until soft peaks form. Fold about a third of the whipped cream into the raspberry mixture. Then fold in the melted chocolate. Fold in the rest of the whipped cream.
